What are your family’s top 3 favorite meals?
Dad called mom Mother Marian. My favorite three meals were;
1.Eggs Olive Golden Rod
Boil eggs cool peal, make a white sauce cut up the whites slip them into the white sauce, grate the egg yoke.
This is served on toast, the grated yoke is drizzled upon the egg whites in the white cream sauce.It is Terrific
2.Chicken in Rice
The chicken’s pin feathers are all removed, a 9×13 pan is greased, two cups of rice is mixed with mushroom soap this mixture is laid in the bottom of the 9×13 pan,The chicken pieces are laid on top of the rice. The mom would drizzle melted margarine on top cook until the chicken is done.Outstanding
3.Over Fried Herb Chicken
Mix two C. flour with 1t Marjoram(these are herbs)1t Paprika, 1t Thyme 1t pepper 1t salt mix together, You will need a container of butter milk(can use milk and a little vinegar if have haven’t buttermilk.Often mom used dehydrated buttermilk it was a powder you just add water and mix.Lasts longer!
Mom used a jelly roll pan they have a short side. In later years instead of using just the pan mom would lay aluminum foil on the pan due to the fact it’s a bitch to clean the pan .
Take your chicken pieces they get dipped into the butter milk then rolled in the flour and herb mixture then laid on the pan.Set the oven to 375. The chicken also has margarine drizzled over the chicken before setting into the oven. This is Devine with mashed potatoes and salad. )The mashed potatoes are better if you use butter and cream cheese no milk)
These are really just three of favorites my mom was one hell of a cook.
